Apple Pie Waffles

These Apple Pie Waffles are loaded with Fall flavor, and they're perfect for Saturday morning breakfast...or Saturday evening dessert! They are crisp on the outside and fluffy on the inside.

Ingredients
  

  • 2 cups all-purpose flour
  • 2 Tbsp sugar
  • 1 3/4 cups whole milk
  • 2 large eggs separated
  • 1/2 cup vegetable oil
  • 1/2 cup sour cream
  • 1 1/4 cups buttermilk
  • 2 tsp vanilla extract
  • 1 large apple shredded or very finely diced (~1 cup when shredded)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1 Tbsp apple pie spice or 1 3/4 tsp cinnamon 1 tsp allspice and 1/4 tsp nutmeg
  • Vanilla ice cream for serving
  • Additional diced apples for serving
  • Whipped cream for serving
  • Caramel sauce for serving

Method
 

Instructions
  1. Using a large bowl, whisk together the flour, sugar, salt, baking powder, baking soda and apple pie spice until well combined. Set bowl aside.
  2. In a separate bowl, whisk together the buttermilk, vegetable oil, sour cream, egg yolks and vanilla extract until well combined.
  3. Add wet ingredients to the bowl with the dry ingredients; gently stir until well combined, but do not overmix.
  4. Fold the shredded apples into the batter.
  5. Using a hand mixer, whip the egg whites until stiff peaks form. Fold the egg whites into the batter. Do not overmix.
  6. Spray a waffle iron with non-stick spray and preheat iron.
  7. Spoon batter into waffle maker, taking care not to overfill.
  8. Cook for 2-3 minutes, or until done.
  9. Serve immediately or place waffles in a 300°F oven for up to 15 minutes while other waffles bake.
  10. Serve with vanilla ice cream and additional diced apples. Sprinkle with a pinch of cinnamon before serving.
